Sweet Potato Casserole

I love www.cooks.com! This is one of my favorite go-to recipe websites. There are a variety of user-submitted recipes for every cook, whether you burn water or are the person everyone wants to see at all of the family gatherings because your food is THE BEST. 

The holidays are here, and you know what that means. Casseroles! Casseroles EVERYWHERE! This recipe comes from Melinda Dobbs. She had me at corn flakes. Enjoy!

SWEET POTATO CASSEROLE 

2 1/2 cups peeled, cooked, mashed sweet potatoes
1 cup milk
1/2 teaspoon cinnamon
1-1/4 cup white sugar
2 eggs
3/4 stick butter
1/2 teaspoon nutmeg

Combine ingredients and mix well. Pour into greased 13x9" casserole dish. Bake 25-30 minutes at 400°F.

Topping:

1/2 cup brown sugar
3/4 cup crushed corn flakes
1/2 cup chopped pecans
3/4 stick butter (6 tablespoons)

Combine topping ingredients and spread evenly over hot potatoes. Cover with miniature marshmallows and bake for another 10-15 minutes at 400°F until marshmallows are evenly browned and melted.
